3rd Annual Culinary Arts Pavilion FPAC pioneered featuring the facets of Filipino cuisine as both a cultural and artistic form:A traditional way of life that combines culinary artistry and cultural practices imbibed with history and regional diversity. Philippine cuisine is a distinct amalgamation of tastes resulting from many outside cultural influences and internal regional preferences. Food is immersed in the heart of every Filipino as a sacred blessing to be respected yet fully enjoyed and appreciated. At the Culinary Arts Pavilion, we invite you to experience the wonders of traditional and contemporary Philippine cuisine beyond the more common pancit and lumpia. Watch and interact with prominent Filipino American chefs and regional experts as they demonstrate their skills in preparing dishes that are distinctly Filipino. Titillate your taste buds as you sample authentic dishes and gourmet creations. Learn regional techniques and culinary secrets handed down through generations. FPAC invites you to discover the healthy benefits and other wonders of Philippine cuisine that can only be found at our Culinary Arts Pavilion.
ADOBO COOKING CONTEST “My adobo’s the best!” Sound familiar? Here’s the proving ground. Experience FPAC’s third Annual Adobo Cooking Contest and taste for yourself the best adobo recipe. Help us find the “2006 Best Adobo in Southern California”—put in your vote and see if our expert panel of judges agree with you. BALUT EATING CONTEST What is a balut? It is a fertilized duck egg that has been boiled before the duckling has grown out of its shell. Interestingly, what is a fear factor for some is a delicacy for others. Watch participants eat balut with gusto (or lack of it?) at the second annual “Balut Eating Contest” at FPAC. The first to finish six (6) baluts wins!
New This Year: “IRON CHEF” CULINARY ARTS TEAM Roy Alcid
Participating Culinary Artists CHEF CECILIA DE CASTRO, CCP Cecilia M. de Castro, owner of Culinary Consultations, has a distinguished career in the culinary arts industry, spanning over 20 years. She currently serves as a culinary producer for the Emmy Award-winning “Wolfgang Puck Show” on the Food Network and is involved with Chef Wolfgang’s cookbook developments and product/recipe developments for the Food Network and Spago. Inspired by her parents’ belief in education and concern for others, she continues to pursue her missions: to teach and share her experience in the culinary field and assist future chefs and to bring forward her Filipino heritage through its culture. She is the Instructor/Coordinator at Westlake Culinary Institute, and a 2004 IACP Teacher of the Year Nominee. Her ideas and efforts helped bring first-ever celebration of Culinary Arts to FPAC. CHEF ROD AGLIBOT Formerly executive chef of Koi of Los Angeles and recently, founding chef at Yi Cuisine, Chef Aglibot earned his stars for creating an innovative menu of Asian dishes; blending bright flavors with an array of textures and temperatures. His tenure at Koi established him as a respected and personable chef, focusing on traditional Japanese ingredients with an essence of French technique and Californian style. Developing his own concept led to the creation of Yi Cuisine, located in L.A.’s Fairfax district where he combined generous hints of his Pilipino ethnic roots coupled with his formal French training and experience to create one-of-a-kind dishes. His two new ventures: Penthouse at the new Huntley Hotel in Santa Monica and an unnamed “secret project” in downtown Los Angeles, will both debut in Fall 2006. CHEF ANDRE GUERRERO Named one of Los Angeles’ Top Chefs by Los Angeles Times Magazine, acclaimed Andre Guerrero is the Chef / Owner of Max in Sherman Oaks, Senor Fred and the soon-toopen Oinkster in Eagle Rock, home to “slow fast food.” This is Andre’s second appearance at the FPAC Culinary Arts Stage. |
